CHEESE ENCHILADAS 
1 dozen flour tortillas
1/2 lg. sour cream, save remainder to serve on top
1 lb. cheddar cheese, grated
1 lb. jack cheese, grated
1 sm. can Ortega diced chilies
1 sm. can chopped olives
2 cans enchilada sauce

Mix all ingredients together, except sauce. Fill tortillas and place in 9 x 13 casserole dish. Cover with sauce. Bake at 350 degrees for 30 minutes and serve.
