CHOCOLATE WALNUT CHEESECAKE 
1 1/4 c. crushed graham cracker crumbs
3/4 c. finely chopped walnuts
1/2 c. melted butter
2 tbsp. sugar
1 tsp. vanilla
Pinch of salt

Mix ingredients well and line bottom and sides of 9-inch springform pan.

FILLING:

4 eggs
1 c. sugar
3 (8 oz.) pkgs. cream cheese
2 sq. unsweetened chocolate
1 tsp. vanilla
1/2 tsp. peppermint extract
2/3 c. whipped cream
Walnut halves

Beat eggs well and gradually add the cup of sugar, beating until lemon colored. Add softened cheese in small amounts. Melt chocolate over hot water and blend into mixture, adding vanilla and mint.

Pour into crust and bake at 350 degrees for 35 minutes or until done. Cool thoroughly. Decorate with whipped cream and walnut halves.
