SPINACH BALLS 
BALLS:

3 c. stuffing mix
6 eggs
1 1/2 sticks melted butter
1/2 c. Parmesan cheese
2 pkgs. frozen chopped spinach, cooked & drained
Salt, pepper, garlic, onion

SAUCE:

1/2 c. dry mustard
1/2 c. whole vinegar
1/2 c. sugar
1 egg

BALLS: Mix together and shape into balls. Bake 10 minutes at 350 degrees.

SAUCE: Soak mustard in vinegar for 1 hour; add sugar and egg. Whisk over medium heat until thick. Serve warm or at room temperature.
