CHOCOLATE-ORANGE MOUSSE 
1 tbsp. butter
2 (1 oz.) sq. semi-sweet chocolate
2 egg yolks
4 tsp. granulated sugar
1 tsp. lemon bits OR 1/2 tsp. lemon rind
1 tbsp. orange juice
1/4 c. whipping cream

Start melting butter over medium heat in saucepan while you measure cream and 1 teaspoon sugar in 1 quart measuring pitcher. Put egg yolks and 1 tablespoon sugar in small bowl. Onto small plate shave 4 crumbly slices off one chocolate square to later use as garnish.

Put chocolate squares in saucepan, break squares up with fork, and stir until melted. Remove from heat and add lemon bits and orange juice. Stir and let stand.

Whip cream until firm peaks are formed. Set aside. Beat egg yolks and sugar 1 minute. Beat chocolate mixture into yolks. Then fold in whipped cream with rubber spatula. Pour mixture into dessert cups and freeze 20 minutes only; transfer mousse to refrigerator section if you aren't ready to serve. Garnish with chocolate shavings. You can make this dessert a day in advance; merely cover and refrigerate instead of freezing. Prep. time: 8-10 minutes. Serves: 4.
