CHICKEN STUFFED TOMATOES 
1 whole chicken breast, boned, skinned and diced
1 tbsp. butter
4 lg., firm, ripe tomatoes
3/4 c. reg. wheat germ
1/3 c. chopped green onion
1/3 c. chopped green pepper
3/4 tsp. curry powder
1/2 tsp. thyme leaves, crushed
1/2 tsp. salt
1/8 tsp. pepper
Avocado wedges, ripe olives, lettuce

Saute chicken in butter until tender, about 5 minutes. Cut thin slices from top of tomatoes. Scoop out pulp, leaving shells intact. Dice tomato tops and pulp. Drain. Combine all ingredients except tomato shells, avocado, olives and lettuce.

Mix well. Spoon mixture into shells. Serve on lettuce garnished with avocado wedges and ripe olives, if desired. Makes 4 servings.
