BEEF - CORNBREAD CASSEROLE 
1 lb. ground beef
1/2 lg. onion, chopped
Salt & pepper to taste
1 (6 oz.) pkg. cornbread mix (do not use cornbread muffin mix)
1 (17 oz.) can creamed corn
1 egg, lightly beaten
1 (7 oz.) can chopped green chilies
8 oz. grated Cheddar cheese

Brown and drain meat and onion; season with salt and pepper.

In bowl, combine cornbread mix with corn and egg (no milk). Spread half batter in a shallow baking dish, it will be thin. Spoon in ground beef evenly; top with chilies and cheese. Add remaining cornbread batter. Bake, uncovered, at 350 degrees for 40-45 minutes until golden brown and sizzling. (Meat flavor can vary to include Mexican dish.) I cook my casserole in my cast iron skillet.
