POTATO HAMBURG BAKE 
4 med. potatoes
1 med. green pepper, chopped
1 med. onion, chopped (1/2 c.)
2 carrots
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. rice, uncooked
1 lb. lean hamburger and turkey
1 (2 lb.) can stewed tomatoes

Slice potatoes thin as for scalloped potatoes. Arrange the potatoes in the bottom of an 8 or 9 inch square glass baking pan. Place onions, green peppers, and carrots and rice on top of potatoes. Sprinkle with salt and pepper. Cover all with cooked meat. Pour can of tomatoes over the top of meat and arrange evenly.

Bake for 1 1/4 to 1 1/2 hours at 350 degrees or microwave until tender.

Since microwave ovens vary in power, you may need to adjust your cooking time.
