CLAM CHOWDER 
1 qt. ground or minced clams (ground course)
1 med. onion
5 lb. potatoes
1 lb. salt pork
1 qt. clam juice

Peel potatoes, dice to about 1 inch pieces. Boil potatoes in just enough water to cover potatoes. Dice onion. Slice tough skin off salt and let float in pan with potatoes. Dice remaining salt pork to about 1/2 inch squares. Saute onions and salt pork. Drain grease and add to potatoes, let this cook about 10 minutes to blend. Turn heat down, add clams and juice and let simmer about 1 hour. The longer it simmers the better it will taste. Enjoy.
