HONEY CHICKEN 
1/4 c. butter, melted
1/2 c. honey
1/4 c. Dijon mustard or prepared mustard
3 tbsp. lemon juice
1 1/2 tsp. paprika
2 1/2 - 3 lb. broiler or fryer, cut up and skinned
1/8 tsp. salt
1/8 tsp. pepper

Combine butter, honey, mustard, lemon juice and paprika, stirring well. Lightly sprinkle chicken with salt and pepper, and place chicken meaty side down, in a lightly greased 12x8 inch baking dish. Pour honey mixture over chicken; cover dish and refrigerate 3 to 4 hours. Remove chicken pieces from refrigerator; bake, covered at 325 degrees for 30 minutes. Remove cover and turn chicken pieces. Bake an additional 30 minutes or until done, basting occasionally with pan drippings. Yield: 4 servings.
