FRIED RICE 
1/4 c. salad oil
2 c. cold cooked white rice
3 eggs, beaten
2 cooked bacon slices, crumbled
2 tbsp. soy sauce
1/8 tsp. pepper
3 scallions with green tops, sliced

Heat oil in heavy skillet. Over medium heat in hot oil, saute rice, stirring with a metal spoon about 5 minutes or until lightly browned. Stir eggs into rice; cook, stirring constantly over medium heat until eggs are cooked, about 3 minutes. Stir in bacon, soy sauce and pepper; combine well. Garnish with scallions. Makes 6 servings.
