LENTIL SOUP 
2 c. cooked lentils
1/4 c. chopped cooked carrots
1/4 c. green onions
1 tbsp. butter
1/2 tsp. salt
1/2 tsp. pepper
1 c. tomato juice
2 c. lentil juice (the water that lentils are cooked in)
1/2 c. parsley, finely chopped

Mix all ingredients together; heat to boiling. Add one tablespoon butter; salt and pepper to taste. Serve hot.
