CHEESE & BROCCOLI POTATO 
1 lg. russet potato
2 oz. Cheddar cheese, grated or sliced
1/2 c. crisp-cooked frozen broccoli pieces
Butter to taste
Salt to taste
Bacon bits (optional)

Scrub potato, pierce with fork, wrap loosely in brown paper. Microwave approximately 6 1/2 minutes or until done. Split lengthwise with fork. Spread with butter and mash lightly (do not remove skin). Top each half with broccoli. Cover broccoli with cheese. Microwave on low until cheese melts, (can be sprinkled with bacon bits).

Since microwave ovens vary in power, you may need to adjust your cooking time.
