BASIC QUICHE 
1 (10 inch) pie crust
2 tbsp. butter
2 med. onions, thinly sliced
1/4 lb. Swiss cheese, grated
4 eggs
1 c. whipping cream
1/2 c. milk
3/4 tsp. salt
1/8 tsp. nutmeg
1/8 tsp. pepper

Prepare pastry; line pan with pastry. Prick bottom and sides. Bake 15 minutes at 425 degrees until lightly brown; cool. Saute onions in butter until tender, not brown. Sprinkle 1/2 the cheese over pastry shell. Arrange onions. Add remaining cheese. Beat eggs thoroughly; blend in cream, milk, salt, nutmeg, and pepper. Pour over cheese into pastry. Bake 15 minutes at 425 degrees, then reduce temperature to 300 degrees for 30 minutes until pastry is golden brown, custard set.

Variations: Decrease onions. Add 1 cup fresh or frozen chopped broccoli, use 1/2 pound cheese. Eliminate onions, use bacon, ham, or sausage (fry and crumble bacon, dice ham).
