CHICKEN STRATA 
8 slices day old bread
2 c. diced cooked chicken
1/2 c. chopped onion
1/2 c. chopped green pepper
1/2 c. chopped celery
1/2 c. mayonnaise
3/4 tsp. salt
Dash of pepper
2 eggs, slightly beaten
1 1/2 c. milk
1 c. cream of mushroom soup
1/2 c. sharp cheese

Butter 2 slices of bread. Cut in 1/2 inch cubes and set aside. Cut remaining bread in 1 inch cubes and place half in bottom of an 8 x 12 inch pan.

Combine chicken, vegetables, mayonnaise and seasonings. Spoon over bread cubes. Sprinkle remaining unbuttered cubes over chicken mixture. Combine eggs and milk. Pour over all. Cover and chill overnight. Before putting in oven, spoon soup over top. Sprinkle with buttered cubes.

Bake in slow oven at 325 degrees for 50 minutes or until set. Sprinkle with cheese the last few minutes of baking. Must be prepared in advance of serving. Serves 8.
