COMPANY POTATOES 
1 med. onion, chopped
3 tbsp. green pepper, chopped
1/4 c. butter
2 1/2 tbsp. flour
2 c. milk
Salt & pepper to taste
4 c. cooked potatoes, cubed
1/3 c. cheese (cut) American or Velveeta

Saute onion and pepper in butter 5 minutes. Stir in flour, gradually stir in milk; cook over low heat until thickened. Add salt and pepper. Add potatoes and cheese; mix well. Pour into 1 1/2 quart casserole, top with cheese. Bake at 325-350 degrees for 30 minutes.
