QUICK SOUR CREAM CORNBREAD 
1 Box Jiffy Cornbread Mix
1 egg
1/3 cup evenly split of one part Buttermilk and one part Sour Cream

Mix above ingredients and bake as per directions on the box. Rises higher and is richer than regular box recipe.

I generally don't like boxed cornbread mixes, but I was pressed for time. I tried this recipe and my kids said it was the best cornbread they've ever tried. So much for making everything from scratch! I'll definitely be making this recipe in the future.

Will try this today. By dividing the 1/3 cup - that will equal 2 1/2 tablespoons each for the sour cream & buttermilk... Am going to add a few shakes of dried, minced onion. Sounds quick, sounds yummy. Thanks for submitting!
