SWEET POTATO BREAD 
USE 2 BOWLS.

LARGE BOWL:

3 1/2 c. unsifted plain flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
3 c. sugar

SMALLER BOWL:

2 c. cooked sweet potatoes
1 c. oil
2/3 c. water
4 eggs - add 1 egg at a time and beat well after each egg
Nuts, raisins, coconut (optional)

Go back to large bowl of dry ingredients. Make a hole in middle and add liquid from small bowl. Stir until almost moist. Bake at 350 degrees for 1 hour in loaf pans 2/3 full. Grease and flour pans well - don't put pans close together in oven while cooking - freezes well.
