BAKED FISH IN SPRING HERBS 
1 lb. fish fillets (sole of flounder works best)
1 lemon
1 tbsp. vegetable or butter
1 tsp. each dried parsley, chives and rosemary

Melt butter and pour into shallow baking dish. Arrange fish in dish. Cut lemon in half, squeeze 1/2 lemon over fish, sprinkle with herbs. Slice remaining lemon into thin slices and arrange on top of fish. Bake at 500 degrees for 12 - 15 minutes or until fish flakes easily with fork. Yield: 4 servings - 1 serving = 115 calories.
