FINNISH OVEN PANCAKE
(Pannukauku)
 
3 eggs
2 c. milk (whole)
3 tsp. sugar
1/2 tsp. salt
1 c. flour

Preheat oven to 400 degrees. Beat first four ingredients until fluffy. Add the flour and beat until smooth.

Place 2 tablespoons butter in each of 2 round pans (the old enamel pans work the best but teflon or Baker's Secret will also work well). Place pans in oven to melt butter. Pour half the batter into each hot pan. Bake 20 minutes until brown.

The pancake will bubble and parts of it will rise; top and sides should be brown; inside will be a little chewy. Serve with strawberry preserves.
