FLOUNDER WITH RICE 
6 flounder fillets
1/4 c. chopped onion
1 tbsp. butter
1/4 c. mayonnaise
1 can cream of mushroom soup
1 tsp. salt
1/4 tsp. pepper
1/4 c. diced pimentos

Roll up fillets. Arrange in shallow baking pan. Cook onion in butter until tender. Blend in mayonnaise and soup. Add salt and pepper. Cook until smooth, stirring constantly. Spoon over fish, sprinkle with pimentos. Bake at 350 for 25 minutes. Serve over rice. Serves 6.
