ISLAND FLOUNDER 
2 med. onions, chopped
1 lg. tomato, peeled and diced
1/4 c. butter
1 c. dry white wine
4 tbsp. heavy cream
1 tsp. salt
1 tsp. thyme
1/2 tsp. pepper
1 1/2 lb. fillet of flounder
1 tsp. lemon juice

Saute onions and tomato in butter. Add wine, cream, salt and pepper, and thyme. Season fish with salt and pepper and lemon. Place fish in baking dish and add sauce. Cover and bake at 350 degrees for 15 minutes.
