CORN AND RICE CASSEROLE 
1 bell pepper, chopped
1 lg. onion, chopped
1 1/2 c. Minute Rice
2 cans cream style corn
1 sm. jar pimento
1/4 c. egg substitute
2 tbsp. sugar
1/2 c. butter buds

Saute pepper and onion in 1/4 cup water. Cook rice according to package directions. (Leave out butter). Add sauteed vegetables and all other ingredients. Pour into baking dish, spray with vegetable cooking spray and bake at 350 degrees for 25 to 30 minutes.
