PERFECT APPLE PIE 
6-8 tart apples, pared, cored & thinly sliced (6 c.)
3/4 - 1 c. sugar
2 tbsp. flour
1/2 - 1 tsp. cinnamon
Dash ground nutmeg
Pastry for 2-crust 9" pie
2 tbsp. butter

If apples lack tartness, sprinkle with about 1 tablespoon lemon juice. Combine sugar, flour, spices and dash salt; mix with apples. Line 9" pie plate with pastry. Fill with apple mixture; dot with butter. Adjust top crust, cutting slits for escape of steam; seal. Sprinkle with sugar. Bake at 400 degrees for 50 minutes or until done.

HOMEMADE PASTRY RECIPE: In bowl, mix 1 cup flour and 1/4 teaspoon salt. Cut in 1/3 cup shortening. Gradually add 2 to 3 tablespoons cold water, mixing until flour is moistened. Shape dough into ball, flatten 1" thick on lightly floured board, roll dough into a circle about 2" larger than inverted 9" pie pan. Line pan with pastry. Turn edge under, if desired, flute.
