IMPOSSIBLE BLENDER QUICHE 
1/2 c. melted butter
1 1/2 c. milk
1/4 tsp. salt (dash of pepper optional)
3 eggs
1/2 c. biscuit mix
1 c. shredded Swiss or Mozzarella cheese
1/2 c. cooked or chopped ham or bacon

Combine melted butter with milk, salt, pepper, eggs and biscuit mix and place in blender. Blend for a few seconds to mix well. Pour into a 9 inch greased pie plate. Sprinkle with cheese and meat and push them gently below surface with back of spoon. Bake at 350 degrees for 45 minutes. Allow to set 10 minutes before cutting. Serves 6 to 8.

My family has made this exact recipe since the 1960's and although our tastes and eating habits have changed over the years, this is still everyone's favorite! Now that I'm cooking for one again, this is the perfect dish for me to "cook once, eat 3 or four times." Perfect with fruit for breakfast, with salad for lunch, and with veggies for dinner.
