COD BIARRITZ 
8 oz. frozen cod
5 tbsp. butter
1 1/2 c. carrots, sliced
2 1/4 c. potatoes, sliced
1 1/2 c. onions, diced
3/4 c. celery
3/4 c. green peppers, chopped or diced
3 tbsp. white wine
3/4 c. water
2 tsp. salt or to taste
1 1/2 tsp. oregano
1/2 tsp. cayenne pepper

Partly thaw fish fillets, cut into large chunks. Saute carrots and potatoes in butter about 5 minutes in large pot. Add remaining vegetables and seasonings. Simmer 3 minutes longer or until done to your taste. Add wine, water and fish, ladle into 6 oven proof bowls or crock, bake in 400 degree oven for 5-8 minutes.

To Microwave: Butter and onion in large microwave dish on high for 3 minutes. Add remaining vegetables, salt and water. Cover and cook on high for 5 minutes more, stirring once. Reduce power to medium high 3 minutes more. Add oregano, pepper, wine or 3 tablespoons water, add the fish, bake on high 3 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
