COLE SLAW 
8 c. shredded cabbage
10 c. cold water
1 c. shredded carrots
1 tbsp. salt
1/2 c. finely chopped onion

DRESSING:

1 c.mayonnaise
3 tbsp. sugar
3 tbsp. cider vinegar
2 tsp. Dijon mustard
3/4 tsp. salt
1/8 tsp. pepper

In large bowl soak cabbage in cold water mixed with salt at least 1 hour or up to 8 hours refrigerated. Drain well, set aside. In large bowl combine dressing ingredients and stir until smooth. Add cabbage, carrots and onion to dressing. Toss until well coated. Serve at once or refrigerate up to 2 days. Makes 8 servings.
