3 lb. cut up chicken 1/2 c. flour 1 tbsp. salt 1/4 tsp. pepper 1/4 c. salad oil 1 c. chopped onion 1 c. chopped green pepper 2-3 minced garlic cloves 1 1/2 c. water 1 (14 oz.) bottle catsup 2 tsp. curry powder 1/2 tsp. thyme 1/2 c. dried currants (may substitute raisins) Remove skin from chicken. Coat with mixture of flour, salt and pepper. In covered skillet, brown chicken in salad oil. Remove from pan. Add onions, green pepper and garlic. Saute until brown. Add water, catsup, curry powder and thyme. Mix well. Add chicken, coating each piece with sauce. Cover and bake in preheated oven (350 degrees) for 40 minutes. Surround chicken on platter with mounds of rice. Add 1/2 cup currants to sauce and pour over chicken. |
