ZUCCHINI CASSEROLE 
3 1/2 lbs. zucchini
1/4 c. chopped onion
1 can mushroom soup
2 shredded carrots
3/4 c. sour cream
3/4 c. grated Cheddar cheese
1 (6 oz.) pkg. Stove Top stuffing (original or chicken)
1/2 c. melted butter

Boil cut-up squash with onion 8 minutes. Drain well. Mix soup, Cheddar cheese, carrots, sour cream and the seasoning from the stuffing mix. Mix this with squash. Place squash in 9x13 inch pan.

In another bowl, mix stuffing crumbs with melted butter. Sprinkle on top of squash. Bake at 350 degrees for 40 minutes or until hot and bubbly. Travels well, reheats well.
