BEAN AND BACON SLAW 
1 c. kidney beans, drained
2 tbsp. chopped parsley
8 strips cooked bacon (crumbled)
1/2 tsp. pepper
1/2 c. mayonnaise
1 1/2 c. diced celery
1/3 c. finely chopped onion
1 tsp. salt
2 tbsp. wine vinegar
1 1/2 c. shredded cabbage

Combine cabbage, celery, parsley, onion, bacon, salt and pepper. Stir vinegar into mayonnaise. Pour over salad mixture. Toss slightly, chill. Serve in a salad bowl lined with lettuce leaves.
