CHICKEN ANGELO 
8 oz. fresh mushrooms, sliced
4 lg. chicken breasts, boned
2 eggs, beaten
1 c. bread crumbs
2 tbsp. butter
6 oz. Mozzarella, shredded
3/4 c. chicken broth

Put half the mushrooms in a 9x13 inch baking pan. Dip chicken in beaten egg, then roll in the bread crumbs.

In a skillet, melt the butter over medium heat and brown chicken on both sides. Place chicken on top of the mushrooms. Arrange remaining mushrooms on top of the chicken and then top with the cheese. Add the chicken broth. Bake at 350 degrees for 30 to 35 minutes. Serve over noodles or rice.
