QUICK RHUBARB PIE 
1 c. sugar
3 c. rhubarb, cut
2 eggs, beaten
3 tbsp. flour
2 tsp. vanilla
Pinch of salt

TOPPING:

1/3 c. brown sugar
2/3 c. flour
1/4 c. butter

Mix all pie ingredients together and pour into lightly oiled 9 inch pie pan. Bake at 350 degrees for 35 or 40 minutes.

TOPPING: Cut together and put on pie.
