SWEET PEPPER HASH 
12 red peppers
12 green peppers
2 c. sugar
16 med. sized onions
1 qt. vinegar
3 tbsp. salt

Wash peppers, quarter and remove all of the seeds except 2-3. Peel the onions and run the peppers and onions through the food chopper using the coarsest knife. Cover the mixture with boiling water, let stand 5 minutes. Drain, repeat and let stand 10 minutes. Drain. Add the vinegar, sugar, and salt. Boil for 15 minutes. Seal in airtight jars.
