SUPER MOIST CORNBREAD 
1 c. hot milk
1 c. cornmeal
1/2 c. flour
1/4 c. oil
1 tsp. salt
2 eggs

Add cornmeal to hot milk all at once in saucepan. Stir until it is all moistened and holds together in one mass. Remove from heat. Add flour and beat (it will be very stiff). Add oil and salt. Stir well and set aside.

Separate 2 eggs. To the egg whites add 1 tbsp. water and a pinch of salt. Beat until stiff. To the 2 yolks, add 1/4 cup boiling water and beat until thick and light (be sure to have a large bowl).

Fold the beaten yolks, then the beaten whites into cornmeal mixture. Pour into a greased 8x8 inch pan. Bake at 400 degrees for 25 minutes or until center is set.
