TURKEY MOZZARELLA 
8 oz. boned turkey
Salt and pepper
1 oz. flour
1 oz. butter
4 oz. mushrooms
Garlic powder
4 tbsp. chicken bouillon
3 oz. Mozzarella
Fresh herbs to garnish (parsley, chives, basil, etc.)

Beat turkey flat; cut into 4 to 6 pieces. Season with salt and pepper; coat evenly with flour. Melt butter, fry turkey until golden and done, about 20 minutes. Transfer to shallow pan. Keep warm.

Fry mushrooms 3 to 4 minutes; spoon over turkey. Sprinkle garlic powder over all. Add stock to fry pan; boil and pour over turkey and mushrooms. Lay cheese on top. Broil until cheese melts and is browned lightly. Garnish with herbs.

To cut calories, omit dredging turkey in flour. Use skim milk Mozzarella.

For "Mock Cordon Bleu" omit mushrooms. Lay thin slices lean ham or Canadian bacon on fried turkey. Top with cheese.

This dish can also be baked at 350 degrees for about 30 minutes if making ahead.
