ZUCCHINI SOUP 
1 lb. sweet Italian sausage, remove casings
2 c. celery, 1/2" slices, cut on angle
2 lb. zucchini, cut in 1/2" slices
1 c. chopped onion
2 (28 oz.) cans tomatoes
2 tsp. salt
1 tsp. Italian seasoning
1 tsp. oregano
1 tsp. garlic powder
1 tsp. sugar
2 green peppers, chopped

Brown sausage, drain off fat. Add celery, cook 10 minutes, stirring occasionally. Add remaining ingredients, except peppers. Simmer, covered, 20 minutes. Add green peppers and cook, covered 10 minutes more. Makes 3 1/2 quarts.
