SWEET AND SOUR BEEF 
1 1/2 lbs. Sirloin steak (cut 1/2 inches thick)
2 eggs
2 garlic cloves, minced
1/2 c. cornstarch
Oil for deep frying
1 can pineapple chunks
2 c. water
3/4 c. vinegar (rice or cider)
1/2 c. sugar
1 tsp. salt
2 green peppers, cut in strips
2 tomatoes, quartered

Cut beef in cubes. Beat egg and garlic together, dip meat in mixture. Roll meat in half of cornstarch. Drop meat into 375 degree oil. Fry meat for 3 minutes or until browned, drain. Drain pineapple reserving juice. Mix 1/4 cup cornstarch with pineapple juice. Then mix water, vinegar, sugar and salt. Simmer, stirring constantly until thickened. Add the pineapple, green pepper, tomatoes and beef. Cook 3 minutes. Serves 6 or 8.
