PASTA SALAD 
2/3 c. olive oil
2 tbsp. fresh basil, or 2 tsp. dried basil
1/3 c. red wine vinegar, or 1/3 c. cider vinegar
1/4 c. chopped onion
2 tbsp. grated Parmesan cheese
3/4 tsp. salt
1/4 tsp. black pepper

Also will need:

8 oz. cubed Mozzarella cheese, rolled in 2 tbsp. basil
12 oz. rotini, wheels or shell pasta
12 oz. frozen mixed vegetables, or fresh steamed broccoli, carrots, beans
1 diced fresh tomato
1/2 c. sliced black olives
Optional - 1 (6 1/2 oz.) jar sliced artichoke hearts

Process first 7 ingredients in blender until smooth. Cook and drain pasta. Add remaining ingredients. Mix well with dressing and sprinkle with 1/4 teaspoon oregano. Best served at room temperature.
