SUMMER SAUSAGE 
2 lbs. ground beef
2 tbsp. Tender Quick salt
2 tbsp. liquid smoke
1 tsp. onion salt
1 tsp. garlic salt
1 tsp. pepper
1 c. cold water

Mix all ingredients well and let stand 24 hours in refrigertor in bowl covered with foil. Shape into rolls and wrap in foil shiny side in. Poke three or four holes on bottom of roll so grease will drain. Bake at 325 degrees for 90 minutes on cookie sheet. Remove meat from foil as soon as you take it out of oven and cool on paper towels. When cool, wrap in foil, shiny side in.
