CARROT CAKE WITH CREAM CHEESE FROSTING | |
1 1/2 c. vegetable oil 2 c. sugar 3 eggs 2 1/4 c. flour 2 tsp. cinnamon 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 c. shredded carrots 1 c. coconut 1 c. chopped walnuts 1 (8 oz.) can crushed pineapple Cream oil, sugar, and eggs together. Sift the 5 dry ingredients together. Add the dry ingredients along with the carrots, coconut, walnuts, and pineapple to the oil mixture; blend well. Pour into a greased 13 x 9 inch pan. Bake at 350 degrees for 50-60 minutes. FROSTING: 1 (8 oz.) pkg. cream cheese 1/4 c. butter 1 tsp. vanilla 1 (1 lb.) box powdered sugar Cream butter, cheese, and vanilla together. Add powdered sugar and blend well. Spread frosting on a cooled cake. |
