GREEN RICE 
2 eggs
2 tbsp. cooking oil
14 1/2 oz. can evaporated milk
2 c. cooked rice
1/2 c. chopped, cooked spinach
1 c. shredded cheese
1 tbsp. grated onion
1 tsp. salt

Beat eggs in large bowl. Add cooking oil and milk. Blend. Stir in remaining ingredients. Place in 1 1/2 quart casserole. Bake at 325 degrees for 40-45 minutes.
