WALDORF WHIP SALAD MOLD
1 (3 oz.) pkg. lemon flavored gelatin
1 c. hot water
3 tbsp. lemon juice
1/2 c. mayonnaise
1 c. chopped celery
1/2 c. chopped walnuts
1 1/2 c. chopped apples
2/3 c. undiluted evaporated milk
Walnut halves
Apple slices

Dissolve gelatin in hot water, cool. Add 1 tablespoon lemon juice, mayonnaise, celery, walnuts and apples; mix well. Chill until mixture is the consistency of unbeaten egg whites.

Chill evaporated milk in refrigerator ice cube tray until soft ice crystals form around edges (10-15 minutes). Whip until stiff (1 minute). Add the remaining lemon juice. Whip until very stiff (1-2 minutes longer). Fold evaporated milk (whipped) into gelatin mixture. Spoon into 5 cups mold. Chill until set (approximately 2 hours). Unmold on salad greens. Garnish with walnut halves and apple slices. Serves 8.

Turn an ordinary Waldorf Salad into a creamy luscious offering. A nutty thing to do but well worth it!
