GREEN PEA SALAD 
1 (16 oz.) can petit pois peas
1 c. (or more) chopped celery
3 tbsp. mayonnaise
Salt and pepper
1 c. grated cheddar
1/2 head lettuce, torn in bite-size
4 water chestnuts (from can), chopped (optional)

Mix peas, celery, mayonnaise, seasonings, water chestnuts (optional) and place in bowl on top of shredded lettuce. Cover with cheese and refrigerate 2 hours or overnight. Lettuce will not brown if torn, not cut!
