TOFU POT ROAST 
2 lbs. extra-firm tofu
8 med. potatoes
9 carrots
5 celery stalks
5 med. onions
4 garlic cloves
3 tbsp. soy sauce
3 tbsp. powdered vegetable broth
1/2 tsp. liquid smoke & pepper
3 c. water

Cut tofu into 1 inch cubes. Mix water, soy sauce, powdered vegetable broth, liquid smoke and pepper. Let sit for 30 minutes. Cut up vegetables into chunks. Spray roasting pan with Pam. Pour marinade and tofu into roasting pan, distribute evenly. Pour in vegetables. Cover. Cook in preheated oven at 350 degrees for 1 hour or until potatoes are tender.
