TOFU AND CHICKEN (OR PORK) 
1/2 lb. boneless chicken
1 lb. tofu (bean curd)
1 c. water
1 tsp. black pepper
salt to taste
3 green onions
1 clove garlic
1 tbsp. fresh ginger root

Cut chicken and tofu into cubes. Shred green onion into strips, chop garlic and grate ginger. Stir-fry chicken in hot oil for 10 minutes, or boil in water. Add tofu, water, green onion, and spices. Cook uncovered until heated through and most of the water has evaporated.
