SPECIAL CHICKEN SALAD 
3 c. cooked, cubed chicken (can use turkey)
1 can sliced water chestnuts
3 stalks celery, diced
2 c. seedless grapes, cut in half
15 3/4 oz. can pineapple chunks, drained
5 1/2 oz. slivered almonds

Combine all above except nuts.

DRESSING:

1/4 onion, chopped
2 c. mayonnaise
2 tbsp. lemon juice
2 tbsp. soy sauce
2 tsp. curry powder

Mix dressing and chicken (all except nuts). Refrigerate overnight. Add nuts just before serving. Serve on lettuce leaf, if desired. Serves 8.
