HONEY OATMEAL MUFFINS 
3/4 c. rolled oats, quick or old fashioned (uncooked)
3/4 c. oat bran (uncooked)
1 c. flour
1/4 c. brown sugar
1 tbsp. baking powder
1/2 tsp. salt
2 egg whites, beaten
2/3 c. skim milk (skim evaporated milk works well, undiluted)
1/4 c. vegetable oil
1/4 c. honey
1/2 c. raisins (sometimes I add 1/4 c. chopped dried apricots)
1/2 c. walnuts
Blueberries can be used, too

Preheat oven to 400 degrees. Combine oats, oatbran, flour, brown sugar, baking powder and salt.

Blend egg, milk, oil and honey; add to dry ingredients, stirring just until moistened. Stir in raisins. Coat 12 muffin cups with nonstick cooking spray and fill with batter. Bake 15-18 minutes or until lightly browned. Or you can make 6 jumbo muffins, more cooking time may be needed.
