BEN'S LASAGNA 
1 lg. pkg. lasagne noodles
6 c. highly seasoned tomato meat sauce with sweet Italian sausage
Basic white sauce (below)
2 c. fresh grated Parmesan cheese
3 tbsp. butter

Preheat oven to 400 degrees. Boil 2 to 3 gallons water in large pot, add pasta and cook, stirring gently until 'al dente', firm, but done. Remove pasta and dip in cold water and drain. As you use the pasta, dry it between 2 kitchen towels to remove any moisture.

Cover bottom of buttered baking dish with a layer of meat sauce, followed by a layer of pasta. Follow with a layer of white sauce sprinkled with 1/3 cup Parmesan cheese. Repeat layer of pasta, meat sauce, pasta, white sauce, cheese until all ingredients are used, ending with cheese. Bake 15 to 20 minutes or until top is golden. Let stand 5 to 10 minutes before serving. This is excellent prepared a day ahead of time but not cooked. It marinades the flavors together.

WHITE SAUCE:

5 c.milk
10 tbsp. butter
10 tbsp. all purpose flour
Salt to taste

Bring milk almost to a boil; set aside. Melt butter in medium saucepan. When butter foams, stir in flour. Let mixture bubble gently over low heat 1 to 2 minutes, stirring constantly. Do not let mixture brown. Whisk in milk all at once. Whisk until smooth. Season with salt and simmer 3 to 5 minutes, whisking constantly until sauce has medium thick consistency. Reduce or increase cooking time for thinner or thicker sauce.
