EASY YEAST ROLLS 
1 c. warm water (not hot)
1 pkg. active dry yeast
2 tbsp. sugar
2 1/2 c. flour
1 tsp. salt
1 egg
2 tbsp. shortening, softened

Dissolve yeast in warm water in a bowl. Measure out flour. Stir sugar, salt and 1/2 of flour into the yeast. Beat with a spoon until smooth. Add egg and shortening. Stir thoroughly. Beat in the rest of the flour. Scrape bowl, cover with a cloth and let rise at 85 degrees until double (approximately 30 minutes). Grease muffin tin. Stir down risen dough. Spoon into pan 1/2 full. Let rise in warm place until dough reaches top of pan, about 20 to 30 minutes. Bake at 400 degrees for 15 to 20 minutes.
