COTTAGE MEAT LOAF 
1 1/2 lb. lean ground beef
1/2 c. catsup
1/3 c. tomato juice
1/2 tsp. each salt and pepper
2 eggs, beaten
3/4 c. fresh bread crumbs
1/4 c. chopped onions
2 tsp. prepared mustard

Topping:

1/4 c. catsup
1/2 tsp. prepared mustard
2 tsp. brown sugar

In large bowl, combine catsup, tomato juice, salt, pepper, eggs, bread crumbs, onions and mustard. Mix until thoroughly blended. Add ground beef. Mix gently but thoroughly. Press into a foil-lined 9 x 5-inch loaf pan.

In a separate bowl, combine the topping ingredients, mixing well. Spread over the meat loaf and bake at 400°F for 35 to 40 minutes or until done. Drain off fat. Let meat loaf rest 5 minutes before serving. Garnish with fresh herbs, if desired.
