HOME-CANNED CORN SALAD 
Cut corn off cob - leave raw.

Approximately: 1 hd. cabbage, chopped 3 med. onions, diced 2 lg. cucumbers, peeled & diced 3 lg. green peppers, diced

1 or 2 of these peppers that are red makes corn salad look pretty in jars.

Place all of the above in a large kettle. Mix in 1/3 to 1/2 cup salt. Cover and let stand 3 hours. Drain off liquid.

Mix in: 4 c. sugar 4 c. vinegar

Bring to a boil. Cover and simmer 45 minutes. Bring back to a boil. Seal in sterilized jars. Usually served with soup beans and corn bread.
